Now that I have the time and room I am going to can all of the vegies I "can". A dear friend, Brenda, loaned me 2 pressure cookers, I already had a lot of canning jars but borrowed a few from Mikes Mom. She has a million of them! Yesterday morning I went to the local Farmers Market and purchased a bushel of green beans. It was all I could do to carry them back to my car. Why didn't someone tell me to take my wheelbarrow??? Geesh!
After 3 hours of snapping green beans we went to dinner then Mike was nice enough to offer to help me finish snapping so from 7 - 9 pm we worked on them until they were finished. In the fridg. they went for the night and out this morning to be canned. There is a young lady who I know that likes to keep busy so I called Ashley this morning asking for her assistance. Just so I could teach her how to can green beans.
This is the product of our labor...
Twenty seven quarts of beautiful beans.Monday night and Tuesday morning I picked Elderberries and cleaned them, 12 cups,
for jelly. Now I just have to find a really good recipe that will set up right. I love Elderberry syrup but I would really nice some Elderberry jelly. Anyone...Sunday we put up Corn, found a dozen ears for $2. Made 7 pints. These ears were so full the kernels were trying to jump off the ear!! Look at the tip of the ear!

I would love to get some sewing in, maybe tomorrow....nope, mowing and have a few more plants to get in the ground.

I am so impressed! I've only canned apple butter - once. I bet those beans are going to taste incredible this winter. Good luck with the berries.
